Simple Baked Cheesecake

 The best thing about something simple is you will never get bored of it ^^.




Simple, and easy, it's the kind of recipe that I love, no need for technique or special equipments, and you can make it again and again. Well, most of the recipes in my blog are in this category, haha.
I think I don't have so much time for baking lately, and it's not because of work, hehe, I addicted to new game, and can't do anything else but spending my time in front of the screen. I tried to stay away from online game, as I know that it can consume most of my time -*- (but it's hard to do), finally today the event that I play just finished, and it's time for me to do something else like posting blog, haha.
Because my family member love cheesecake, and I love making it too, but I never posted this kind of simple cheesecake in my blog before. I decided to post it, when I could move myself from the screen. 
It's easy to make, as you just mix everything together (no need to whip anything at all), and baking it directly (no hot water), and just let it set and sink a bit, then refrigerate before serving, easy, right?
I hope you enjoy this recipe, and repeat making many, many time ^^, as I think that simple and delicious cake recipe is the best thing that you (and I) always want.


Recipe: Simple Baked cheesecake

Simple Baked Cheesecake 
Makes 15 cm cake


Base
80 g ........................ Digestive biscuits
40 g ........................ Melted unsalted butter

Filling
225 g ...................... Cream cheese (Room temperature)
40 g ........................ Granulated sugar
1 1/2 tbsp ............... Corn starch
1/2tsp ..................... Vanilla extract
1tsp ........................ Lemon juice
1 ............................. Egg
80 g ........................ Whipping cream
................................ Pinch of Salt






Preheat an oven to 170C.
Line 15 cm cake pan with baking paper. 


 Crush biscuits into fine crumbs.


 Mix with melted butter.


Pour into the prepared pan, and press to smooth the top.
Set aside while preparing the filling.


 Press the cream cheese until smooth.


Pour the sugar and sift the corn starch into the bowl.
Mix to combine.


 Put whipping cream, egg, vanilla, lemon juice and pinch of salt into the bowl.


 Whisk to combine.


 Pass through a sieve.


 And pour into the prepared pan.


 Bake for 60-70 minutes.


 Let it cool completely.


 Refrigerate until cool (it's more delicious ^^).


 Run a knife around the cake.


Remove from the pan and cut into pieces before serving.
